Apple Cider Chicken
I serve this with fresh biscuits and apple butter, mashed potatoes and veggies or a salad
use organic when you can -- Aug 31, 2008 --

Organic whole chicken (3 lbs) or chicken pieces


1/2 cup organic apple cider vinegar (Braggs)


 1/2 cup organic chicken stock


 1/2 cup organic apple juice (or apple cider)


 1-2 tablespoons garlic minced, or 1 tablespoon garlic powder


 In a sauce pan mix garlic salt (and/or fresh garlic) with 1/2 cup of apple cider vinegar, 1/2 cup fresh apple juice, 1/2 cup organic chicken stock, and 1/4 cup honey. Simmer until honey is dissolved and mixture is hot. Loosen chicken skin and pour the mixture inside. Season the top with several shakes of salt, basil, and pepper. (If using a crock pot you should brown chicken first so skin gets crisper.)


 I usually cook uncovered on 350 for 10 minutes, then covered for an hour, then again uncovered until the top is nice and golden crispy.
